Aesthetics are vital in Japanese cuisine. Great care goes into the preparation of food, with fresh ingredients precisely sliced and presented. The saltiness of the ocean is offset by the sweetness of the wine in a medley of traditional flavours harking back thousands of years; but the present day always makes an appearance too, in the form of seasonal ingredients.
In Japanese cuisine, the aim is to achieve the three fives. Each meal should comprise five colours, five preparation methods, and five flavours. The essential colours are black, white, yellow, red and green. The preparation methods are boiling, grilling, frying, steaming, and of course raw, like sushi. The flavours that should feature are sweet, sour, strong, bitter, and salt.

Official sushi rules:
-The chef will not handle money, it handles dinner. The person handling food should not touch the money.
-When you eat sushi, one should not eat a small bite of what you have between the eating sticks and put it back on the plate, so if you got some delicious food between the eating sticks, enjoy it...
-Order sushi as sushi and sashimi as sashimi. Don´t order Nigri sushi and just eat the filling, and then don´t leave rice left on the plate, that makes the chef less happy.
-Japanese sushi chefs think it's very nice when you ask them about various recommendations regarding dishes. It gives them the opportunity to display their skills to best effect. Specially if you are a beginner. Just say to the chef, he will not bite probally, ask after today's special, so the chef can do something very nice.
-These rules are unwritten, so you follow them with respect or not at all, the choice is yours. The chef is in any case happy if you try .....
